SCIENTIFIC NAME: POMATOMUS SALTATRIX

The bluefish is the only extant species of the family Pomatomidae. They are a highly migratory species of fish that dwell along America’s Atlantic coastline. They can also be found in many here temperate and tropical environments around the globe. Living in depths ranging between 80-100 ft, bluefish will travel in schools, some schools are massive. A bluefish school can cover many square miles, some as big as 10,000 football fields. Bluefish are known to live up to 12 years and they grow at a swift speed, reaching above 30lbs and almost 40 inches.

This is a strong flavor-forward fish, another species that is also great for smoking but has versatility in culinary application where you are looking to impart bold fish flavor. The flesh of bluefish is firm, fatty, fine-textured, and can range in color from white to silverish-grey.
