RED SNAPPER

SCIENTIFIC NAME: LUTJANIDAE CAMPECHANUS

The Red Snapper can be found dwelling anywhere from 30-620 ft in the Gulf of Mexico and from the southern Eastern Seaboard of North America, Central America, and northern South America. This fish species grows at a pretty moderate rate, growing up to 50 lbs, with a lifespan of approximately 50 or more years. The red snapper feeds primarily on shrimp, squid, octopus, and plankton. Their habitat consists of living on or close to the bottom, usually in or around continental shelf structures, like rocks, ledges, and reefs. These structures provide sustainable feeding as well as predatory protection for the fish.

Red snapper is a very versatile fish, in terms of culinary usage. It is a lean and moist fish that has a distinctive but mildish flavor that can be described as an ocean-kissed sweetness with some nutty notes. Red snapper is for the most part low in fat content with flesh that is delicate but firm in texture.
