Flounder, halibut, and sole are all members of the flatfish family. These thin, oval-like, and sometimes diamond-shaped fish lie flat on the ocean floor and can be found in almost every part of the world. Halibut are one of the largest flatfish species, weighing more than 500 lbs and measuring up to 8-9 ft in length. Flatfish can live in ocean water depths from 500 ft to 6,000 ft. In particular, flounder are found in depths of up to 500+ ft, halibut can dwell in depths of up to 6,000 ft, and sole can sustain living in depths of more than 1,800 ft. Flatfish are able to burrow and camouflage, allowing for predator protection and stealthy hunting. With their eyes on the upper side of their flat bodies, they have 3D-like vision that helps hunt and protect.
Collectively, flounder, halibut, and sole all have similar taste and texture profiles; mild-tasting with a slight sweetness and delicate, flaky white flesh. They are a leaner fish without an overbearing fishy taste and offer some versatility in culinary application due to that quality.
